Vegan Chocolate Cupcakes
Makes 12 cupcakes
You will need:
1 1/2 cups all-purpose flour
1 cup sugar
1 tsp baking soda
1/2 tsp salt
1/4 cup cocoa powder
1/3 cup vegetable oil
1 cup water
1 tsp distilled vinegar
1 tsp vanilla extract
Sprinkles
For the frosting:
1/4 cup margarine softened
1 1/2 cups powdered sugar
1/2 tsp vanilla extract
1/4 tsp salt
1 tbsp soymilk or until frosting is spreadable
Directions:
Preheat oven to 350 degrees F
Line cupcake pan with 12 individual liners or spray with non-stick spray
Sift together flour, sugar, baking soda, salt, and cocoa powder
Add in vegetable oil, water, vinegar, and vanilla extract and stir until no lumps remain
Pour batter into each liner until near full
Place in oven and bake for 20 minutes
Let cool
Begin to prepare frosting
Beat margarine and powdered sugar together until combined
Add in vanilla extract and salt and beat for an additional minute
Mix in milk a little at a time until desired consistency is reached
Frost cupcakes
Top with sprinkles
