Vegan Chocolate Cupcakes
Makes 12 cupcakes
You will need:
- 1 1/2 cups all-purpose flour
- 1 cup sugar
- 1 tsp baking soda
- 1/2 tsp salt
- 1/4 cup cocoa powder
- 1/3 cup vegetable oil
- 1 cup water
- 1 tsp distilled vinegar
- 1 tsp vanilla extract
- Sprinkles
For the frosting:
- 1/4 cup margarine softened
- 1 1/2 cups powdered sugar
- 1/2 tsp vanilla extract
- 1/4 tsp salt
- 1 tbsp soymilk or until frosting is spreadable
Directions:
- Preheat oven to 350 degrees F
- Line cupcake pan with 12 individual liners or spray with non-stick spray
- Sift together flour, sugar, baking soda, salt, and cocoa powder
- Add in vegetable oil, water, vinegar, and vanilla extract and stir until no lumps remain
- Pour batter into each liner until near full
- Place in oven and bake for 20 minutes
- Let cool
- Begin to prepare frosting
- Beat margarine and powdered sugar together until combined
- Add in vanilla extract and salt and beat for an additional minute
- Mix in milk a little at a time until desired consistency is reached
- Frost cupcakes
- Top with sprinkles
