With this recipe you can have vegan food and enjoy it! This chocolate cupcake recipe is simply delectable!

Vegan Chocolate Cupcakes

Makes 12 cupcakes

You will need:

  • 1 1/2 cups all-purpose flour
  • 1 cup sugar
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/4 cup cocoa powder
  • 1/3 cup vegetable oil
  • 1 cup water
  • 1 tsp distilled vinegar
  • 1 tsp vanilla extract
  • Sprinkles

For the frosting:

  • 1/4 cup margarine softened
  • 1 1/2 cups powdered sugar
  • 1/2 tsp vanilla extract
  • 1/4 tsp salt
  • 1 tbsp soymilk or until frosting is spreadable

Directions:

  • Preheat oven to 350 degrees F
  • Line cupcake pan with 12 individual liners or spray with non-stick spray
  • Sift together flour, sugar, baking soda, salt, and cocoa powder
  • Add in vegetable oil, water, vinegar, and vanilla extract and stir until no lumps remain
  • Pour batter into each liner until near full
  • Place in oven and bake for 20 minutes
  • Let cool
  • Begin to prepare frosting
  • Beat margarine and powdered sugar together until combined
  • Add in vanilla extract and salt and beat for an additional minute
  • Mix in milk a little at a time until desired consistency is reached
  • Frost cupcakes
  • Top with sprinkles
  • Enjoy!
