How to make: strawberry oat muffins

We all enjoy a yummy baked treat once in awhile, but if you’re looking for a somewhat healthier snack to eat, these strawberry muffins are perfect for you.

We used the recipe from Cookie and Kate.

Ingredients:

  • 1 ¾ cups white whole wheat flour or regular whole wheat flour
  • ⅓ cup old-fashioned oats, plus 2 tablespoons for sprinkling on top
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon fine sea salt
  • ⅓ cup extra-virgin olive oil
  • ⅓ cup maple syrup
  • 2 eggs, preferably at room temperature
  • 1 cup plain Greek yogurt
  • 2 teaspoons vanilla extract
  • 2 cups hulled and diced ripe strawberries 
  • 1 teaspoon raw sugar, for sprinkling on top (optional)

Our tip: Eat these warm with butter or jam to add some extra flavor.
